Carrot Ginger Coleslaw

Cook Time: 30 minutes

Serves: 4-6 



Ingredients: 

  • 6 cups green cabbage, shredded  

  • 2 cups red cabbage, shredded 

  • 1 cup carrots, grated (about 3 large carrots)

  • 3 scallions, sliced (reserve 1 tablespoon for garnish)

  • 1 Tbsp Toasted sesame seeds (white or black) for garnish 

  • 1 cup Riley’s Carrot Ginger Dressing 



Instructions: 

  1. In a large bowl, combine the cabbage (green and red), carrots, and scallions. 

  2. Dress coleslaw ingredients with Riley’s Carrot Ginger. 

  3. Using your hands, combine the coleslaw ingredients with Riley’s Carrot Ginger to ensure everything is fully coated and incorporated. 

  4. Top with toasted white sesame seeds and the reserved sliced scallions. 


Notes: 

  • I like using the slicer attachment on my cuisinart to get perfect shreds that aren’t too fine.
