Green Goddess Mixed Bean Salad

Serves: 4
Ingredients:
1 15 oz can cannellini beans, drained and rinsed* See Notes
1 15 oz can chickpeas, drained and rinsed
½ lb green beans, trimmed, cut into 2 inch pieces
1 cup celery, cut in half lengthwise then sliced, (from 2-3 sticks celery)
1/2 cup red onion, finely chopped (1/2 medium red onion)
3 tbsp cilantro, chopped
3 tbsp parsley, chopped
1 tbsp lemon zest
1 tbsp lemon juice
¾ cup Riley’s Green Goddess
Kosher salt
Black pepper
Instructions:
Combine all ingredients. Season to taste with kosher salt and black pepper.
Notes:
Cannellini beans can be subbed with great navy beans or butter beans.
