Green Goddess Mixed Bean Salad

Riley's green goddess mixed bean salad recipe ingredients

Ingredients: 

  • 1 15 oz can cannellini beans, drained and rinsed* See Notes 

  • 1 15 oz can chickpeas, drained and rinsed

  • ½ lb green beans, trimmed, cut into 2 inch pieces 

  • 1 cup celery, cut in half lengthwise then sliced, (from 2-3 sticks celery)

  • 1/2 cup red onion, finely chopped (1/2 medium red onion)

  • 3 tbsp cilantro, chopped 

  • 3 tbsp parsley, chopped

  • 1 tbsp lemon zest 

  • 1 tbsp lemon juice 

  • ¾ cup Riley’s Green Goddess 

  • Kosher salt

  • Black pepper 


Instructions: 

  1. Combine all ingredients. Season to taste with kosher salt and black pepper. 

Notes:

  • Cannellini beans can be subbed with great navy beans or butter beans.
